With the rainy damp weather settling in for the weekend I embarked on a soup making tangent last night! Not one soup but two! I made enough of each to have some fresh this weekend and I froze several containers of each for a later time. The kitchen was a whirlwind of activity, not to mention a bit messy when it was all over. But the aroma's were wonderful!
Creation #1 - Roasted Butternut Squash & Corn (serve with a dollop of sour cream on top)
Creation #2 - Roasted Tomato & Black Bean (serve with shredded Mozzarella cheese on top)
Mmmm Good! Break out the soup mugs and crackers!

recipe for the pumpkin soup please - always looking for new ones - although the pumpkins here -never make great soup I find
